This is my mom’s recipe for potato soup. It is very easy to make and very flavorful. Some people prefer it to my new potato soup which I will give you below this one. This serves 4.
Dice 4 large potatoes, 1 onion, & 3 cloves garlic. Cook potatoes in water until just fork tender. Drain potatoes and set aside. In soup pot melt 1/2 stick butter. Add onions and garlic. (If you must hide the onion from picky eaters but want the same taste use 1 – 2 tsp onion powder and cook until dissolved in butter.) Add salt and pepper to taste, 2 tbsp chicken soup base mix, 2 tbsp cornstarch, parsley mixing well after each addition. Slowly pour in 4 cups of milk stirring well. Add potatoes and heat soup to thicken. Serve hot with garnish of fresh parsley.
