This is a wonderful soup for a winter party. It serves 15 and is meaty and has good things in it to keep you warm for hours. If you do not like sherry in this soup, a dry white wine would be excellent or you could leave it out entirely. You can also use all wild rice if you wish just cook a little longer for the rice to become tender.
3 cans condensed chicken broth
2 cups water
¼ cup wild rice
¼ cup long grain rice
½ cup finely chopped green onion
½ cup margarine or butter
½ cup flour
½ tsp salt, ½ tsp poultry seasoning, pepper to taste
2 cups half & half (can use milk if desired)
1 ½ cup cubed chicken precooked (this would be a good time to use the chicken from you chicken noodles)
8 slices bacon, cooked till crisp and crumbled
1-3 tbsp dry sherry
In large saucepan, combine water, broth, rice and onions. Bring to boil, cover and reduce heat to simmer for 20 - 30 minutes or until rice is tender. Melt butter in medium pan. Stir in flour and seasonings stirring constantly. Stirring constantly cook one minute for flour to loose its floury taste and seasonings to incorporate. Slowly add half & half while stirring, cook until slightly thick. Slowly add to Rice mixture stirring constantly. Add remaining ingredients. Heat gently but do not boil.
