Cherry Rhubarb Jam


This was just dumb luck that I found this recipe. A friend of mine’s mother makes this and will not give out the recipe. This sounds so similar I thought I would try it. It worked! I use this on top of my almond sugar cookies with white almond frosting and it is heavenly.

4 cups finely chopped rhubarb.
1 can pitted cherries cut in half.
4 cups sugar
1 large box cherry Jell-O (1 ½ small boxes)

Cook rhubarb & sugar for12 minutes. Stir and add fruit. Cook for 3 more minutes. Stir in Jell-O. Pour into jars and seal with wax. Best if refrigerated 2 weeks or freeze for longer periods.
