Peanut Brittle

Rub bottoms of two cookie sheets with butter and stick into freezer or refrigerator to keep pan cold.
Prepare all ingredients and set by stove ready for use.
½ cup water
1 cup white corn syrup
2 cups sugar
Pinch of salt
2 tbsp butter
2 ½ tsp baking soda
2 tsp vanilla
2 tsp almond flavoring
16 oz raw peanuts (may substitute any raw nuts)
In heavy pan with handle place ½ cup water and bring to boil. Add salt, corn syrup and sugar. Using candy thermometer cook to 260º. Add peanuts and continue to cook stirring continuously (so as to not allow peanuts to burn on bottom of pan) to 290º. Remove from heat and add butter (stir until melted), flavoring, and baking soda. Beat well and pour onto cold prepared cookie sheets spreading candy out with spatula. Cook to room temperature and break apart.
