Salmon Patties

1-14.75 oz can of salmon
1 egg
½ cup bread crumbs (or specialty cracker crumbs, like Ritz®)
1 tsp salt
1 TBSP parsley
¼ cup finely chopped onion

Drain and reserve liquid from canned salmon. Mix egg, onion, bread crumbs, herbs, and salmon together.
Make into patties. If mixture seems too thick add a little reserved liquid from salmon.
In frying pan heat 1 TBSP olive oil. Place patties in pan and brown on each side, turning gently. Drain on paper towels and serve.
